If you love desserts and are always on the hunt for new recipes, and you’re active on social media, you’ve probably heard about the most popular cookies taking the internet by storm—Brooki cookies.

These cookies are slightly larger than the classic cookies we’re used to seeing, and behind the entire concept stands Australian pastry chef Brooke Bellamy, better known as Brooki. In addition to cookies, she also creates cakes and various other desserts, but she’s best known for her cookies, which come in a variety of flavors.

Recipes for all her cookies are available in her cookbook Brooki, which was recently released. Below, we bring you the recipe for her most popular cookies, New York Cookies.

Preparation

1. Cream the butter and sugars
Place cold butter cut into cubes in a bowl and mix for 2 minutes. Then add both types of sugar and continue mixing for another 2–3 minutes.

2. Add the egg and dry ingredients
Add one egg at a time, mixing well in between, then add the dry ingredients. Mix until everything is well combined.

3. Incorporate chocolate and nuts
Chop the chocolate into pieces (or use chocolate chips) and add them to the cookie dough along with the chopped walnuts.

4. Shape the cookies
Shape the dough into balls, weighing each to ensure they are 150 g, and refrigerate them for 3 hours.

5. Bake
Place the chilled dough balls on baking paper with enough space between them. Bake in a preheated oven at 180°C (356°F) for 16–18 minutes.
