Muffins

  1. Prepare the molds Preheat the oven to 175 degrees Celsius. Line a 12-cup muffin tin with paper liners or grease with oil.
  2. Combine the wet ingredients In a medium bowl, mix the flour, baking powder, salt, cinnamon, and ginger. Set aside while you prepare the rest of the mixture. In another bowl, add the sugar, egg, and vanilla extract, and beat until the mixture becomes light and creamy, about 4 minutes. Add the oil and buttermilk, and mix until fully combined, about 1 minute.
  3. Prepare the batter Reduce the mixer speed and add half of the dry ingredients. Briefly mix on the lowest speed until combined, then add the remaining flour mixture, mixing until just combined. Scrape the sides and bottom of the bowl with a spatula, and fold in the grated apple.
  4. Bake the muffins Divide the batter among the 12 muffin cups and place in the oven. Bake for about 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool for 5 minutes at room temperature. Take the muffins out of the tin and transfer them to a wire rack to cool completely.

Cream

  1. Prepare the cream With a mixer on medium-high speed, beat the butter until soft and creamy. Add the cream cheese, cinnamon, and vanilla extract, and continue to mix for another 2 minutes. Reduce the mixer speed and gradually add the powdered sugar. Mix until combined, scraping the sides of the bowl as needed.

Decoration

  1. Decorate the muffins Using a piping bag and a decorating tip, frost the muffins. Sprinkle with cinnamon if desired and serve.
