Directions
For the Beef Kebab:
- In a large mixing bowl, combine the ground beef, chopped onion, minced garlic, ground cumin, paprika, ground coriander, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
- Take a small amount of the beef mixture and form it into small sausage shapes, creating the kebabs.
- Heat olive oil in a skillet or grill pan over medium heat. Once hot, add the beef kebabs and cook for about 4-5 minutes on each side, or until they are cooked through and nicely browned on the outside. Make sure to cook them in batches if necessary.
- Once cooked, remove the beef kebabs from the skillet and set aside.
For the Assembly:
- Warm the lavash bread in the oven or on a skillet for a few seconds to make it more pliable.
- Lay a piece of lavash bread flat on a clean surface.
- Place some sliced onions, mixed greens, cooked bulgur wheat, and a few beef kebabs in the center of the lavash bread.
- Carefully fold the sides of the lavash bread over the filling, then roll it up tightly, similar to a burrito.
- If desired, you can secure the ends of the lavash roll with toothpicks or wrap it in parchment paper to hold its shape.
- Repeat the process with the remaining ingredients until all the kebabs and fillings are used up.
- Serve the beef kebab lavash wraps immediately, either whole or sliced into smaller pieces for easier serving.
