For the Beef Kebab:

  1. In a large mixing bowl, combine the ground beef, chopped onion, minced garlic, ground cumin, paprika, ground coriander, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
  2. Take a small amount of the beef mixture and form it into small sausage shapes, creating the kebabs.
  3. Heat olive oil in a skillet or grill pan over medium heat. Once hot, add the beef kebabs and cook for about 4-5 minutes on each side, or until they are cooked through and nicely browned on the outside. Make sure to cook them in batches if necessary.
  4. Once cooked, remove the beef kebabs from the skillet and set aside.

For the Assembly:

  1. Warm the lavash bread in the oven or on a skillet for a few seconds to make it more pliable.
  2. Lay a piece of lavash bread flat on a clean surface.
  3. Place some sliced onions, mixed greens, cooked bulgur wheat, and a few beef kebabs in the center of the lavash bread.
  4. Carefully fold the sides of the lavash bread over the filling, then roll it up tightly, similar to a burrito.
  5. If desired, you can secure the ends of the lavash roll with toothpicks or wrap it in parchment paper to hold its shape.
  6. Repeat the process with the remaining ingredients until all the kebabs and fillings are used up.
  7. Serve the beef kebab lavash wraps immediately, either whole or sliced into smaller pieces for easier serving.
