Directions
Instructions:
- Heat a skillet over medium-high heat and add the diced breakfast meat (if using). Cook until it’s crispy or heated through, then remove it from the skillet and set it aside.
- In the same skillet, add a bit of oil if needed, then add the diced onions and bell peppers. Sauté them until they become tender and slightly caramelized, about 5-7 minutes. Season with salt and pepper to taste.
- While the vegetables are cooking, crack the eggs into a bowl and whisk them together with a pinch of salt and pepper. If you like fluffier eggs, you can add a splash of milk or cream to the beaten eggs.
- Push the sautéed vegetables to one side of the skillet and add the butter or oil to the empty side. Pour in the beaten eggs and let them cook undisturbed for a moment until they start to set around the edges.
- Using a spatula, gently scramble the eggs, stirring occasionally, until they reach your desired level of doneness. This should take about 2-4 minutes.
- Once the eggs are cooked, combine them with the sautéed vegetables and add the diced tomatoes. Mix everything together and cook for an additional minute or until the tomatoes are slightly softened.
- Warm the tortillas by placing them in a dry skillet or in the oven for a few seconds on each side.
- To assemble the breakfast tacos, spoon the scrambled egg and vegetable mixture onto each tortilla. Top with the cooked breakfast meat (if using) and shredded cheddar cheese.
- Add your favorite toppings, such as salsa, sour cream, avocado, jalapeños, cilantro, or hot sauce, to taste.
