Ingredients
-
4 boneless, skinless Chicken Breasts
-
1 bunch of fresh, trimmed Asparagus
-
2 tablespoons Olive Oil
-
2 cloves, minced Garlic
-
1 teaspoon Dried thyme
-
Salt and pepper to taste
-
1, sliced Lemon
-
1/4 cup grated (Optional) Parmesan Cheese
Directions
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt, pepper, dried thyme, and dried oregano on both sides.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Once the oil is hot, add the chicken breasts and cook for about 4-5 minutes on each side until they’re nicely browned.
- Remove the chicken breasts from the skillet and set them aside on a plate.
- In the same skillet, add a bit more olive oil if needed, then add the minced garlic and cook for about 1 minute until fragrant.
- Add the trimmed asparagus to the skillet and cook for about 3-4 minutes, stirring occasionally, until they’re slightly tender but still crisp.
- Pour in the chicken broth, lemon juice, and lemon zest. Stir to combine.
- Return the chicken breasts to the skillet, nestling them amongst the asparagus.
- Transfer the skillet to the preheated oven and bake for about 15-20 minutes, or until the chicken is cooked through and the asparagus is tender.
- Once done, garnish with chopped parsley and lemon slices if desired.
- Serve hot and enjoy your delicious Chicken Asparagus!
