Directions
- Prepare the chicken breasts by pounding them slightly to ensure even thickness. This helps them cook more evenly.
- In a shallow dish, whisk together the flour, paprika, garlic powder, salt, and black pepper. This will be the coating for the chicken.
- Dip each chicken breast into the beaten eggs, making sure it’s coated on both sides.
- Press the chicken breasts into the flour mixture, making sure they are fully coated with the seasoned flour.
- Heat vegetable oil in a large skillet over medium-high heat. The oil should be around 1/2 inch deep.
- Carefully place the coated chicken breasts into the hot oil and cook for about 4-5 minutes per side, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C). Cook in batches if necessary.
- Once cooked, transfer the chicken breasts to a paper towel-lined plate to drain excess oil.
- Assemble the sandwiches by spreading mayonnaise and mustard (if desired) on the burger buns.
- Place a lettuce leaf on the bottom half of each bun, followed by a crispy chicken breast.
- Top the chicken with sliced tomatoes and pickles.
- Finish assembling the sandwiches by placing the top half of the bun on the fillings.
- Serve the Crispy Chicken Sandwiches immediately and enjoy!
