300g Fusilli pasta

1 cup Basil pesto sauce

2 cups, halved Cherry Tomatoes

1 cup Mozzarella Cheese

Salt and pepper to taste

Directions
- Preheat Oven: Preheat your oven to 200°C (400°F).
- Roast Tomatoes: Place halved cherry tomatoes on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in the preheated oven for 15-20 minutes or until tomatoes are softened and slightly caramelized.
- Cook Pasta: While the tomatoes are roasting, cook the fusilli pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
- Combine Ingredients: In a large mixing bowl, toss the cooked pasta with basil pesto sauce until evenly coated. Add in the roasted tomatoes and diced mozzarella cheese. Gently toss to combine.
- Serve: Transfer the pasta mixture to serving plates or bowls. Garnish with fresh basil leaves if desired.
