Fusilli pasta with pesto sauce

  1. Preheat Oven: Preheat your oven to 200°C (400°F).
  2. Roast Tomatoes: Place halved cherry tomatoes on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in the preheated oven for 15-20 minutes or until tomatoes are softened and slightly caramelized.
  3. Cook Pasta: While the tomatoes are roasting, cook the fusilli pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  4. Combine Ingredients: In a large mixing bowl, toss the cooked pasta with basil pesto sauce until evenly coated. Add in the roasted tomatoes and diced mozzarella cheese. Gently toss to combine.
  5. Serve: Transfer the pasta mixture to serving plates or bowls. Garnish with fresh basil leaves if desired.
