  1. In a medium bowl, whisk together all the marinade ingredients: olive oil, soy sauce, honey, minced garlic, paprika, cumin, dried oregano, salt, and pepper.
  2. Place the cubed pork in a resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it’s evenly coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes. You can marinate for longer if you have time, even overnight.
  3. While the pork is marinating, prepare your vegetables. Cut the bell peppers, red onion, and zucchini into 1-inch pieces.
  4. Preheat your grill to medium-high heat.
  5. Thread the marinated pork cubes, bell peppers, red onion, zucchini, and cherry tomatoes alternately onto the skewers. This can be done in any order you prefer.
  6. Brush the grill grates with a little oil to prevent sticking. Place the kabobs on the preheated grill.
  7. Grill the shish kabobs for about 10-15 minutes, turning them occasionally, until the pork is cooked through, with an internal temperature of 145°F (63°C). The vegetables should be slightly charred and tender.
  8. Once the kabobs are done, remove them from the grill and let them rest for a couple of minutes before serving.
  9. Serve the grilled pork shish kabobs with your favorite side dishes, such as rice, couscous, or a fresh salad.
