Meat Preparation

Make the Marinade
In a mortar and pestle or food processor, finely chop and mix garlic, salt, pepper, onion, oregano, cumin, and olive oil. You should achieve a paste-like consistency.

Score the Meat and Apply the Marinade
Place the meat in a baking dish and gently (not completely) separate the thick skin from the meat.First, twist the skin and make several cuts in the meat. Next, pour the mojo marinade over it. Rub the garlic and spice paste into the meat. Return the skin back over the meat.

Let the Flavors Marinate
Begin by covering the entire dish with aluminum foil. First, refrigerate it for at least a few hours; however, for the best flavor, it’s ideal to let it sit overnight. Next, preheat your oven to 190 degrees Celsius (375 degrees Fahrenheit). After that, remove the meat from the fridge and allow it to sit at room temperature for a bit. Then, pat the skin dry with paper towels to enhance crispiness. Following that, lightly spray the aluminum foil with oil, and subsequently cover the baking dish.

Bake Covered for About 4 Hours
Now, place the dish in the oven and roast the meat for about 4 hours. It is important to note that it’s done when the internal temperature reaches 180 degrees Celsius (350 degrees Fahrenheit). Moreover, you should adjust the cooking time based on the size of the meat piece.

Bake Uncovered for an Additional 30 Minutes
Afterward, remove the meat from the oven and increase the temperature to 230 degrees Celsius (450 degrees Fahrenheit). Next, remove the foil and roast for an additional 30 minutes to achieve a crispy crust, being careful not to burn it. Finally, take it out of the oven and let it rest for 20 minutes. Subsequently, use a fork to shred the meat and drizzle it with the leftover pan juices.

 

Mojo Marinade

Blend the Ingredients
In a blender, finely chop garlic and red onion. In a bowl, combine orange juice, lime juice, cumin, oregano, black pepper, salt, coriander, ground garlic, red onion, and Tabasco sauce. Mix well.

Add Olive Oil and Mix Again
Pour in the olive oil and mix again thoroughly.
