1. Let the Dough Rise
To make delicious naan, start by preparing the dough. In a large bowl, dissolve yeast in warm water. Let it sit for about 10 minutes until frothy—this activates the yeast for better rising. Next, mix in sugar, milk, a beaten egg, salt, and enough flour to form a soft dough. On a lightly floured surface, knead the dough for 6 to 8 minutes until smooth and elastic. This step is crucial for achieving the perfect naan texture.
Once kneaded, transfer the dough to a well-oiled bowl. Cover it with a clean cloth and let it rise for one hour at room temperature. The dough should double in size, creating air pockets that make the naan fluffy and light.
2. Shape the Dough
After the dough has risen, gently punch it down to release air. Remove it from the bowl and knead in minced garlic for added flavor. Divide the dough into small balls, about the size of golf balls. Cover the dough balls with a towel to keep them warm, allowing them to rise for another 30 minutes. This second rise is key for achieving that soft, airy naan.
3. Cook the Naan
While the dough is rising again, heat a skillet or grill pan and lightly oil it. Once hot, place a ball of dough on the pan and cook for 2 to 3 minutes until it puffs up and turns golden brown. Brush the uncooked side with butter, then flip it to cook that side as well. Achieving a nice char without burning the naan is essential.
After cooking, brush the naan with butter before removing it from the pan. Repeat this process with the remaining dough balls.
