6 cups (homemade or store-bought) Beef or chicken broth
2 cups Water
1 pound / thinly sliced (you can use beef chuck or chicken breast) Beef or chicken
8 ounces (egg noodles, rice noodles, or your choice) Noodles
1 / thinly sliced Onion
3 cloves / minced Garlic
1-inch / minced Piece of ginger
2 / thinly sliced Carrots
2 stalks / thinly sliced Celery
1 / thinly sliced (optional) Bell pepper
2 tablespoons Vegetable Oil
Salt and pepper to taste
2 tablespoons (adjust to taste) Soy sauce
1 tablespoon (adjust to taste) Fish sauce

Noodles Meat Soup Recipe

  1. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the minced garlic and ginger, and sauté for about 1 minute until fragrant.
  2. Add the sliced onions and cook for another 2-3 minutes until they become translucent.
  3. Add the sliced beef or chicken to the pot and cook until it’s no longer pink, about 3-5 minutes. If you’re using beef, you can also brown it a bit for extra flavor.
  4. Pour in the beef or chicken broth and water. Bring the mixture to a boil, then reduce the heat to a simmer.
  5. Add the sliced carrots, celery, and bell pepper (if using) to the pot. Simmer for about 10-15 minutes or until the vegetables start to become tender.
  6. Stir in the soy sauce and fish sauce. Taste the soup and adjust the seasoning with salt, pepper, and additional soy sauce or fish sauce as needed to suit your taste.
  7. While the soup is simmering, cook the noodles separately according to the package instructions. Drain and set aside.
  8. To serve, place a portion of cooked noodles in each bowl and ladle the hot soup over the noodles.
  9. Garnish with fresh cilantro or green onions if desired.
  10. Serve your noodles meat soup hot and enjoy!
