470 ml Water

180 g Quinoa

400 g (canned) Black beans

1 small, chopped Cucumber

1 small, chopped Red bell pepper

10 g, chopped Fresh parsley

60 ml Lemon juice

2 tablespoons Olive Oil

½ teaspoon Salt

½ teaspoon Pepper
Directions
Simmer
In a large pot, bring water to a boil and add quinoa. Reduce the heat, cover, and simmer until the quinoa has absorbed all the liquid. Remove from heat and fluff the quinoa with a fork. Transfer to a bowl and let it cool completely.
Combine the ingredients
Add beans, cucumber, bell pepper, and parsley to the quinoa. In a smaller bowl, mix the remaining ingredients and pour over the salad. Toss everything well to combine. Chill in the refrigerator before serving.
