Directions
1. Preheat the oven
Preheat the oven to 170 degrees Celsius and line a large baking sheet with parchment paper.
2. Combine the ingredients
In a large bowl, mix the oats, chopped almonds, shredded coconut, and salt.
Pour in the melted coconut oil, honey, and vanilla extract, then stir well to create a sticky mixture.
3. Spread the mixture on the baking sheet
Transfer the mixture to the prepared baking sheet and spread it out evenly in a single layer on the parchment paper.
4. Bake
Bake until the oats turn golden, about 20 to 25 minutes. If you prefer smaller granola pieces, stir it once or twice during baking; if you like larger chunks, do not stir.
5. Cool
Remove from the oven and let it cool for at least 45 minutes. Mix in dried fruit, chopped chocolate, and coconut chips.
If there are larger pieces of granola, you can break them up by hand.
Store the granola in an airtight container at room temperature. Serve with milk or yogurt.
