1 cup / halved Cherry Tomatoes

1 cup Fresh spinach leaves

1/2 cup / grated Parmesan Cheese

Crushed red pepper flakes (optional, for a little heat)

Directions
- Cook the Ravioli:
- Bring a large pot of salted water to a boil.
- Add the ravioli and cook according to the package instructions if using fresh ravioli, or as directed for frozen ravioli. It usually takes 2-5 minutes for fresh ravioli or a few minutes longer for frozen ravioli. Cook until they float to the surface.
- Drain the cooked ravioli and set aside.
- Sauté the Vegetables:
- In a large skillet or pan, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté for 2-3 minutes until they become fragrant and translucent.
- Add the Bell Peppers and Zucchini:
- Add the diced red and yellow bell peppers and zucchini to the skillet.
- Sauté for about 5 minutes, or until the vegetables start to soften and develop some color.
- Add Cherry Tomatoes and Spinach:
- Stir in the halved cherry tomatoes and fresh spinach leaves.
- Cook for another 2-3 minutes until the spinach wilts and the tomatoes start to soften.
- Combine with Ravioli:
- Add the cooked ravioli to the skillet with the sautéed vegetables.
- Season and Add Cheese:
- Sprinkle the grated Parmesan cheese over the top.
- Season the dish with salt, black pepper, and optional crushed red pepper flakes for a bit of heat.
- Toss and Serve:
- Gently toss everything together in the skillet until the ravioli and vegetables are well coated with the cheese and seasoning.
- Garnish and Serve:
- If desired, garnish with fresh basil leaves before serving.
