2 cups cooked, (preferably cooled or day-old rice) White rice
1/2 pound (about 225g), peeled and deveined Medium-sized shrimp
2, lightly beaten Eggs
1 cup, (such as diced carrots, peas, and corn) Mixed vegetables
3-4 cloves, minced Garlic
2-3, chopped Green onions
2 tablespoons Soy sauce
1 tablespoon (optional) Oyster sauce
2 tablespoons Vegetable Oil
Salt and pepper to taste
(optional, for flavor) Sesame oil

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the beaten eggs to the skillet and scramble them until they are fully cooked. Remove the scrambled eggs from the skillet and set them aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and cook for about 30 seconds until fragrant.
  4. Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.
  5. Add the mixed vegetables to the skillet and cook for 3-4 minutes until they are tender.
  6. Add the cooked rice to the skillet and break up any clumps with a spatula. Stir-fry the rice with the vegetables for 2-3 minutes.
  7. Add the cooked shrimp and scrambled eggs back into the skillet with the rice and vegetables. Stir to combine.
  8. Add the soy sauce and oyster sauce (if using) to the skillet. Stir well to evenly distribute the sauces.
  9. Season the fried rice with salt, pepper, and a few drops of sesame oil, if desired. Stir everything together and cook for another 2-3 minutes until heated through.
  10. Garnish the shrimp fried rice with chopped green onions before serving.
