Ingredients

2 cups cooked, (preferably cooled or day-old rice) White rice

1/2 pound (about 225g), peeled and deveined Medium-sized shrimp

2, lightly beaten Eggs

1 cup, (such as diced carrots, peas, and corn) Mixed vegetables

3-4 cloves, minced Garlic

2-3, chopped Green onions

2 tablespoons Soy sauce

1 tablespoon (optional) Oyster sauce

2 tablespoons Vegetable Oil

Salt and pepper to taste

(optional, for flavor) Sesame oil
Directions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the beaten eggs to the skillet and scramble them until they are fully cooked. Remove the scrambled eggs from the skillet and set them aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and cook for about 30 seconds until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.
- Add the mixed vegetables to the skillet and cook for 3-4 minutes until they are tender.
- Add the cooked rice to the skillet and break up any clumps with a spatula. Stir-fry the rice with the vegetables for 2-3 minutes.
- Add the cooked shrimp and scrambled eggs back into the skillet with the rice and vegetables. Stir to combine.
- Add the soy sauce and oyster sauce (if using) to the skillet. Stir well to evenly distribute the sauces.
- Season the fried rice with salt, pepper, and a few drops of sesame oil, if desired. Stir everything together and cook for another 2-3 minutes until heated through.
- Garnish the shrimp fried rice with chopped green onions before serving.
