Directions
Cook the Shrimp:
- Heat olive oil in a skillet over medium heat.
- Add minced garlic and cook until fragrant, about 1 minute.
- Add shrimp to the skillet and season with salt and pepper.
- Cook the shrimp until pink and opaque, about 2-3 minutes per side.
- Remove the skillet from heat and squeeze lemon juice over the cooked shrimp. Sprinkle with chopped parsley and toss to coat.
2. Assemble the Rolls:
- Slice the sandwich rolls or hot dog buns horizontally, but not all the way through.
- Place a leaf of lettuce on the bottom of each roll.
- Arrange a few slices of tomato on top of the lettuce.
- Place a few shrimp on top of the tomatoes.
- Add sliced avocado if desired.
- Spread mayonnaise or aioli on the top half of the rolls.
- Close the rolls and serve immediately.
3. Serve:
- Serve the shrimp rolls with your favorite side dishes like coleslaw, potato salad, or chips.
