1, diced Onion
2 cloves, minced Garlic
1 (10-ounce) package, thawed and drained Frozen chopped spinach
8 slices, cubed Day-old bread
2 cups, (such as cheddar, Swiss, or mozzarella) Shredded cheese
6 Large eggs
2 cups Milk
Salt and pepper to taste
1/4 cup (Optional) Grated parmesan cheese

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add diced onion and minced garlic, and cook until softened and fragrant, about 3-4 minutes.
  3. Add the thawed and drained spinach to the skillet, and cook until any excess moisture has evaporated, about 5 minutes. Remove from heat.
  4. Spread half of the bread cubes in the prepared baking dish. Top with half of the spinach mixture, and then sprinkle with half of the shredded cheese. Repeat layers with the remaining bread cubes, spinach mixture, and shredded cheese.
  5. In a mixing bowl, whisk together eggs and milk until well combined. Season with salt and pepper to taste.
  6. Pour the egg mixture evenly over the layers in the baking dish, pressing down gently to ensure the bread cubes are soaked.
  7. If desired, sprinkle grated Parmesan cheese over the top of the strata.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and continue baking for an additional 15-20 minutes, or until the strata is set and golden brown on top.
  9. Allow the strata to cool for a few minutes before slicing and serving.s
