Ingredients

2, peeled and diced Large potatoes,

2, peeled and diced Medium carrots

1, chopped Medium Onion

2 cloves, minced Garlic

4 cups Vegetable or chicken broth

Salt and pepper to taste

2 tablespoons Olive Oil
Directions
- Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic. Sauté until onions are translucent and fragrant, about 3-4 minutes.
- Add diced potatoes and carrots to the pot. Stir well to combine with the onions and garlic.
- Pour in the vegetable or chicken broth. Bring to a boil, then reduce heat to low and let simmer until the vegetables are tender, about 15-20 minutes.
- Once the vegetables are soft, remove the pot from heat. Using an immersion blender or transferring in batches to a blender, puree the soup until smooth.
- Season with salt and pepper to taste. Serve hot.
