Prepare the zucchini
Grate the zucchini with the skin into a bowl, add a teaspoon of salt, and let it sit for 10 minutes. Squeeze the zucchini with your hands until all the liquid is drained out.

Prepare the mixture
Add the ground turkey, salt, pepper, onion, egg, garlic, and ricotta to the zucchini. Mix the ingredients thoroughly and use a spoon to form round, flat patties about 2 cm thick.

Cook
Heat olive oil over medium-high heat and cook the patties, about 3-4 minutes on each side. Place the cooked patties on a plate lined with a paper towel, and serve with a salad of your choice.
