2 tablespoons Olive Oil
1 / Finely chopped Small onion
3 cloves / minced Garlic
1 (14 ounces) diced tomatoes, drained Can
1/2 cup / drained and chopped Sun-dried tomatoes in oil
1/2 cup Heavy cream
1/2 cup Chicken broth
1 teaspoon / (or a mix of dried basil, oregano, and thyme Dried Italian seasoning
Salt and black pepper, to taste
Fresh basil leaves, for garnish
Grated Parmesan cheese, for garnish (optional)

  1. Season the salmon fillets with salt and black pepper on both sides.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the salmon fillets to the skillet, skin-side down, and cook for about 4-5 minutes on each side or until they are cooked through and have a nice golden crust. Remove the salmon from the skillet and set it aside.
  3. In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes or until the onion becomes translucent and fragrant.
  4. Add the diced tomatoes and sun-dried tomatoes to the skillet. Cook for another 2-3 minutes to allow the flavors to meld.
  5. Stir in the heavy cream, chicken broth, and dried Italian seasoning. Bring the mixture to a gentle simmer and let it cook for about 5 minutes to thicken the sauce slightly.
  6. Return the cooked salmon fillets to the skillet, skin-side up. Spoon some of the sauce over the salmon.
  7. Continue to simmer for another 2-3 minutes to heat the salmon through.
  8. Taste the sauce and adjust the seasoning with more salt, pepper, or Italian seasoning if needed.
  9. Garnish the Tuscan Salmon with fresh basil leaves and, if desired, grated Parmesan cheese.
  10. Serve the salmon with the creamy Tuscan tomato sauce on top, and you can pair it with your choice of side dishes, such as pasta, rice, or steamed vegetables.
