1 cup (full-fat or low-fat, based on preference) Greek yogurt

1 medium, grated Cucumber

2 cloves, minced Garlic

1 tablespoon Extra-virgin olive oil

1 tablespoon Fresh lemon juice

1 tablespoon (or mint, if preferred) Chopped fresh dill

Salt and pepper to taste
Directions
Instructions:
- Start by grating the cucumber. You can use a box grater or a food processor fitted with a grating attachment. Once grated, place the cucumber in a fine-mesh strainer over a bowl. Sprinkle with a little salt and let it sit for about 10-15 minutes to allow excess moisture to drain out.
- In a mixing bowl, combine the Greek yogurt, minced garlic, lemon juice, olive oil, and chopped dill.
- After the cucumber has drained, squeeze it with your hands to remove any excess moisture. Then, add the grated cucumber to the yogurt mixture.
- Stir everything together until well combined. Taste and adjust the seasoning with salt, pepper, and more lemon juice if desired.
- Cover the tzatziki sauce and refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
- Serve chilled as a dip with pita bread, vegetables, or as a sauce for gyros, souvlaki, or grilled meats.
