Directions
- Heat the vegetable oil in a large pot over medium-high heat.
- Add the diced onion, minced garlic, and jalapeño pepper. Sauté for about 3-5 minutes until the onion becomes translucent.
- Add the diced chicken to the pot and cook until it’s no longer pink in the center.
- Stir in the diced tomatoes, enchilada sauce, diced green chilies, chicken broth, ground cumin, chili powder, salt, and pepper. Bring the mixture to a boil.
- Reduce the heat to low, cover, and let the soup simmer for about 20-30 minutes, or until the chicken is cooked through and tender.
- Once the chicken is fully cooked, remove it from the soup and shred it using two forks. Then, return the shredded chicken to the pot.
- Taste the soup and adjust the seasoning with additional salt, pepper, cumin, or chili powder as needed.
- To serve, ladle the soup into bowls. Top each bowl with crushed tortilla chips, shredded cheese, green onions, cilantro, a dollop of sour cream or Greek yogurt, and a squeeze of fresh lime juice.
