Ingredients

1 kg Chicken breast fillets

130 g homemade or store-bought Basil pesto

to taste Salt

to taste Pepper

500 g Cherry Tomatoes
Directions
Season the chicken
Coat the chicken in pesto on each side (about 2 tablespoons of pesto per fillet). Season with salt and pepper to taste.
Grill
Heat a grill, grill pan, or regular pan over medium-high heat. Cook the chicken for 5 to 6 minutes on each side. Transfer to a warmed plate. Sauté the tomatoes until they soften and turn brown. Top the chicken with a bit more pesto and serve with the tomatoes.
Oven
Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit) and line a baking sheet with aluminum foil or parchment paper. Place the coated chicken on the baking sheet and bake for 30 minutes, then add the tomatoes to the baking sheet with the chicken. Bake for another 20 minutes until the chicken is fully cooked.
