2 cups Diced stale bread or croutons
1, diced Medium Onion
2 cloves, minced Garlic
2 tablespoons Olive Oil
1/2 teaspoon Dried thyme
Salt and pepper to taste
(such as Parmesan or Gruyère), for garnish (optional) Grated cheese
Chopped, for garnish (optional) Fresh parsley or chives

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent and fragrant, about 5 minutes.
  2. Add the dried thyme to the pot and sauté for another minute to release its flavors.
  3. Pour the chicken or vegetable broth into the pot and bring it to a simmer. Let it simmer for about 10-15 minutes to allow the flavors to meld.
  4. Add the diced stale bread or croutons to the simmering broth. Let the soup simmer for another 5-10 minutes, or until the bread has softened and absorbed some of the broth.
  5. Taste the soup and season with salt and pepper according to your preference.
  6. Ladle the soup into bowls and garnish with grated cheese and chopped fresh parsley or chives, if desired.
