Directions
- Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent and fragrant, about 5 minutes.
- Add the dried thyme to the pot and sauté for another minute to release its flavors.
- Pour the chicken or vegetable broth into the pot and bring it to a simmer. Let it simmer for about 10-15 minutes to allow the flavors to meld.
- Add the diced stale bread or croutons to the simmering broth. Let the soup simmer for another 5-10 minutes, or until the bread has softened and absorbed some of the broth.
- Taste the soup and season with salt and pepper according to your preference.
- Ladle the soup into bowls and garnish with grated cheese and chopped fresh parsley or chives, if desired.
