Directions
Cut the Chicken
First, wash the chicken thoroughly. After cleaning, cut it into large cubes that are perfect for skewering. The pieces should be of equal size so they cook evenly on the grill or in a frying pan.
Prepare the Marinade
Place the chicken cubes in a large mixing bowl. Prepare the marinade by mixing the olive oil, fresh lemon juice, minced garlic, dried oregano, salt and pepper. The olive oil adds moisture, and the lemon juice adds a tangy flavor that pairs perfectly with the garlic and herbs. Stir the chicken in the marinade until all the pieces are evenly coated. The garlic and oregano bring out the typical Mediterranean flavors that make souvlaki so delicious.
Marinating the Chicken
Cover the marinated chicken with plastic wrap or aluminum foil and refrigerate for at least 1.5 hours. The longer you marinate the chicken, the more flavorful and tender it will be. Assemble the Skewers
