100 ml Vegetable stock

6 tablespoons White wine vinegar

5 Radishes

Half Cucumber

Directions
Potato salad made in the way they do it in the German region of Bavaria
1. Cook the potatoes
Wash the potatoes and bring salted water to a boil in a large pot. Add the potatoes with their skins on and cook covered over medium heat for about 25 minutes.
Drain and peel the potatoes once they are slightly cooled, as they can burn you when still hot.
2. Prepare the salad
Slice the peeled potatoes and add the sliced onion. Mix well. In a small pot, bring the broth to a boil with half the vinegar and pour it over the potatoes.
Let it sit for about 30 minutes. Meanwhile, mix the remaining vinegar with oil, mustard, salt, and pepper.
Add the sliced cucumber and radishes to the potatoes, along with finely chopped chives, and mix with the dressing. Season to taste with salt and pepper. Chill before serving.
