2 boneless, / cut into bite-sized pieces Skinless chicken breasts
2 tablespoons Olive Oil
2 cloves / minced Garlic
1 / finely chopped Small onion
1 cup Heavy cream
1/2 cup Chicken broth
1/2 cup / grated Parmesan Cheese
1/2 teaspoon Dried thyme
1/2 teaspoon Dried Oregano
Salt and pepper to taste
(optional) Fresh parsley, chopped, for garnish

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Cook the pasta according to the package instructions until al dente.
    • Drain the pasta and set it aside.
  2. Cook the Chicken:
    • Season the chicken pieces with salt and pepper.
    • Heat the olive oil in a large skillet over medium-high heat.
    • Add the chicken and cook until it’s no longer pink in the center and is lightly browned on all sides, about 5-7 minutes.
    • Remove the cooked chicken from the skillet and set it aside.
  3. Make the Creamy Sauce:
    • In the same skillet, add a bit more olive oil if needed.
    • Add the minced garlic and chopped onion. Sauté for 2-3 minutes until the onion is translucent and the garlic is fragrant.
  4. Combine Ingredients:
    • Return the cooked chicken to the skillet.
    • Add the heavy cream, chicken broth, dried thyme, and dried oregano.
    • Stir to combine all the ingredients.
  5. Simmer and Thicken:
    • Bring the mixture to a simmer and cook for about 5 minutes, or until the sauce starts to thicken.
    • Stir in the grated Parmesan cheese and continue to simmer for an additional 2-3 minutes until the sauce is creamy and smooth.
  6. Season and Serve:
    • Taste the sauce and adjust the seasoning with salt and pepper as needed.
    • Add the cooked pasta to the skillet and toss everything together until the pasta is well coated with the creamy sauce.
  7. Garnish and Serve:
    • Remove the skillet from the heat.
    • If desired, garnish with fresh chopped parsley for a pop of color and flavor.
