Ingredients

250 ml (1% fat), buttermilk, or almond milk Milk

130 g whole wheat or regular flour

1 ripe Banana

2, large Eggs

1 teaspoon Oil

1 teaspoon Vanilla extract

2 teaspoons Baking powder

¼ teaspoon Salt

(or regular oil) Cooking spray

190 g fresh (or frozen), for topping Berries

1, chopped Banana
-
or sprinkles for topping, optional Whipped cream
Directions
1. Mix the ingredients
Put the milk, flour, one banana, eggs, oil, vanilla, baking powder, and salt into a blender. Use the pulse function and blend until you get a smooth, cohesive mixture.
2. Dispense the batter
Pour the batter into a squeeze bottle or a food bag with a small hole cut in it to dispense the batter in small amounts.
3. Heat the pan
Heat a pan over medium heat and spray it with cooking oil or lightly oil it with regular oil.
4. Cook the pancakes
Squeeze small dots of batter, about the size of a coin, and cook them until bubbles start to appear. Shake the pan occasionally to ensure even cooking and a nice golden color.
5. Serve
Divide the pancakes into four bowls, then add chopped banana, berries, and your favorite toppings.
