Ingredients

500g (such as cod or haddock), cut into chunks White fish fillets

2 cups Cooked rice

1 cup Frozen peas

1, finely chopped Onion

2 cloves, minced Garlic

1 cup grated Cheddar Cheese

1 cup Milk

2 tablespoons All-purpose flour

2 tablespoons Butter

Salt and pepper to taste

Optional Chopped fresh parsley for garnish (optional)
Directions
- Preheat your oven to 180°C (350°F).
- In a saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
- Stir in the flour to form a roux, cooking for about a minute.
- Gradually pour in the milk while stirring continuously to avoid lumps. Cook until the sauce thickens.
- Season the sauce with salt and pepper to taste.
- In a large mixing bowl, combine the cooked rice, frozen peas, fish chunks, and the prepared sauce. Mix well to coat everything evenly.
- Transfer the mixture into a greased baking dish.
- Sprinkle the grated cheese over the top of the casserole.
- Bake in the preheated oven for about 25-30 minutes, or until the fish is cooked through and the cheese is golden and bubbly.
- Once done, remove from the oven and let it cool slightly before serving.
- Garnish with chopped fresh parsley if desired.
