2 cups Cooked rice
1 cup Frozen peas
1, finely chopped Onion
2 cloves, minced Garlic
1 cup grated Cheddar Cheese
1 cup Milk
2 tablespoons All-purpose flour
2 tablespoons Butter
Salt and pepper to taste
Optional Chopped fresh parsley for garnish (optional)

  1. Preheat your oven to 180°C (350°F).
  2. In a saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
  3. Stir in the flour to form a roux, cooking for about a minute.
  4. Gradually pour in the milk while stirring continuously to avoid lumps. Cook until the sauce thickens.
  5. Season the sauce with salt and pepper to taste.
  6. In a large mixing bowl, combine the cooked rice, frozen peas, fish chunks, and the prepared sauce. Mix well to coat everything evenly.
  7. Transfer the mixture into a greased baking dish.
  8. Sprinkle the grated cheese over the top of the casserole.
  9. Bake in the preheated oven for about 25-30 minutes, or until the fish is cooked through and the cheese is golden and bubbly.
  10. Once done, remove from the oven and let it cool slightly before serving.
  11. Garnish with chopped fresh parsley if desired.
