  1. Preheat your oven to 350°F (175°C).
  2. Spread the bread cubes on a baking sheet and drizzle them with a couple of tablespoons of olive oil. Toss them to coat evenly and then toast them in the oven for about 10-15 minutes, or until they are crispy and golden brown. Make sure not to burn them. Remove from the oven and let them cool.
  3. In a large salad bowl, combine the chopped tomatoes, sliced onion, cucumber, bell pepper, olives, and torn basil leaves.
  4. Once the toasted bread cubes have cooled slightly, add them to the bowl with the vegetables.
  5. In a small bowl, whisk together the minced garlic, extra-virgin olive oil, red wine vinegar, Dijon mustard (if using), honey or sugar (if using), salt, and black pepper to make the dressing.
  6. Pour the dressing over the salad and gently toss everything together until all the ingredients are well coated.
