Stuffed Zucchini with Ground Beef

Enjoy flavorful Stuffed Zucchini with ground beef, fresh herbs, and spices. A healthy and satisfying weeknight dinner option!

1. Chop the Vegetables
Sauté the onion and garlic in a little olive oil, then add the bell pepper and continue to sauté over low heat, stirring constantly. Add the crumbled ground beef and mix well. Let it cook on low heat.

2. Hollow Out the Zucchini
Hollow out the zucchini by removing the center while leaving a few millimeters of the “zucchini flesh” on the skin. Chop the removed flesh into small pieces and add it to the sautéed mixture. Mix everything together, add a little water, and continue cooking over low heat, stirring occasionally.

3. Prepare the Couscous
Pour hot water over the couscous in a bowl, let it sit for 5 minutes, then drain well and add it to the sautéed meat mixture. Once the meat is cooked, add spices to taste and mix everything together.

4. Bake
Place the hollowed zucchini halves in a baking dish, drizzle with a little oil, and bake in the oven at 180°C (350°F) for about 15 minutes. Then, remove the zucchini from the oven, fill each half with the sautéed meat mixture, sprinkle with grated cheese on top, and bake again for another 10 to 15 minutes.

Remove the zucchini from the oven, allow them to cool slightly, and serve!
