  1. In a mixing bowl, combine cottage cheese, eggs, flour, sugar, and vanilla extract. Mix until well combined.
  2. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  3. Pour about 1/4 cup of the batter onto the skillet for each pancake.
  4. Cook until bubbles form on the surface of the pancake, then flip and cook until golden brown on both sides.
  5. Repeat with the remaining batter.
  6. Serve warm with your favorite toppings such as maple syrup, fresh fruit, or jam.
