1 cup Cottage cheese

1/4 cup Flour

1 tablespoon (optional) Sugar

1/2 teaspoon (optional) Vanilla extract

Butter or oil for cooking
Directions
- In a mixing bowl, combine cottage cheese, eggs, flour, sugar, and vanilla extract. Mix until well combined.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour about 1/4 cup of the batter onto the skillet for each pancake.
- Cook until bubbles form on the surface of the pancake, then flip and cook until golden brown on both sides.
- Repeat with the remaining batter.
- Serve warm with your favorite toppings such as maple syrup, fresh fruit, or jam.
