8 slices Rye bread
1/2 lb thinly sliced Corned beef
1/2 lb, sliced Swiss cheese
1 cup, drained Sauerkraut
1/4 cup Thousand Island dressing
2 tablespoons, softened Unsalted butter

  1. Preheat a skillet or griddle over medium heat.
  2. Spread Thousand Island dressing on one side of each slice of rye bread.
  3. On four of the slices, layer slices of Swiss cheese, followed by corned beef, and then sauerkraut. Top with another slice of rye bread, dressing side down.
  4. Butter the outsides of the sandwiches.
  5. Place the sandwiches on the skillet or griddle and cook until the bread is golden brown and the cheese is melted, about 4-5 minutes per side.
  6. Remove from the skillet, slice diagonally, and serve hot.
