1 (14 ounces) diced tomatoes, drained Can

1/2 cup / drained and chopped Sun-dried tomatoes in oil

1/2 cup Heavy cream

1/2 cup Chicken broth

1 teaspoon / (or a mix of dried basil, oregano, and thyme Dried Italian seasoning

Salt and black pepper, to taste

Fresh basil leaves, for garnish

Directions
- Season the salmon fillets with salt and black pepper on both sides.
- Heat the olive oil in a large skillet over medium-high heat. Add the salmon fillets to the skillet, skin-side down, and cook for about 4-5 minutes on each side or until they are cooked through and have a nice golden crust. Remove the salmon from the skillet and set it aside.
- In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes or until the onion becomes translucent and fragrant.
- Add the diced tomatoes and sun-dried tomatoes to the skillet. Cook for another 2-3 minutes to allow the flavors to meld.
- Stir in the heavy cream, chicken broth, and dried Italian seasoning. Bring the mixture to a gentle simmer and let it cook for about 5 minutes to thicken the sauce slightly.
- Return the cooked salmon fillets to the skillet, skin-side up. Spoon some of the sauce over the salmon.
- Continue to simmer for another 2-3 minutes to heat the salmon through.
- Taste the sauce and adjust the seasoning with more salt, pepper, or Italian seasoning if needed.
- Garnish the Tuscan Salmon with fresh basil leaves and, if desired, grated Parmesan cheese.
- Serve the salmon with the creamy Tuscan tomato sauce on top, and you can pair it with your choice of side dishes, such as pasta, rice, or steamed vegetables.
