  1. Heat the vegetable oil in a large pot over medium-high heat.
  2. Add the diced onion, minced garlic, and jalapeño pepper. Sauté for about 3-5 minutes until the onion becomes translucent.
  3. Add the diced chicken to the pot and cook until it’s no longer pink in the center.
  4. Stir in the diced tomatoes, enchilada sauce, diced green chilies, chicken broth, ground cumin, chili powder, salt, and pepper. Bring the mixture to a boil.
  5. Reduce the heat to low, cover, and let the soup simmer for about 20-30 minutes, or until the chicken is cooked through and tender.
  6. Once the chicken is fully cooked, remove it from the soup and shred it using two forks. Then, return the shredded chicken to the pot.
  7. Taste the soup and adjust the seasoning with additional salt, pepper, cumin, or chili powder as needed.
  8. To serve, ladle the soup into bowls. Top each bowl with crushed tortilla chips, shredded cheese, green onions, cilantro, a dollop of sour cream or Greek yogurt, and a squeeze of fresh lime juice.
