4 boneless, skinless Chicken Breasts
1 bunch of fresh, trimmed Asparagus
2 tablespoons Olive Oil
2 cloves, minced Garlic
1 teaspoon Dried thyme
Salt and pepper to taste
1, sliced Lemon
1/4 cup grated (Optional) Parmesan Cheese

Chicken asparagus

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt, pepper, dried thyme, and dried oregano on both sides.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat. Once the oil is hot, add the chicken breasts and cook for about 4-5 minutes on each side until they’re nicely browned.
  4. Remove the chicken breasts from the skillet and set them aside on a plate.
  5. In the same skillet, add a bit more olive oil if needed, then add the minced garlic and cook for about 1 minute until fragrant.
  6. Add the trimmed asparagus to the skillet and cook for about 3-4 minutes, stirring occasionally, until they’re slightly tender but still crisp.
  7. Pour in the chicken broth, lemon juice, and lemon zest. Stir to combine.
  8. Return the chicken breasts to the skillet, nestling them amongst the asparagus.
  9. Transfer the skillet to the preheated oven and bake for about 15-20 minutes, or until the chicken is cooked through and the asparagus is tender.
  10. Once done, garnish with chopped parsley and lemon slices if desired.
  11. Serve hot and enjoy your delicious Chicken Asparagus!
