  1. Prepare the chicken breasts by pounding them slightly to ensure even thickness. This helps them cook more evenly.
  2. In a shallow dish, whisk together the flour, paprika, garlic powder, salt, and black pepper. This will be the coating for the chicken.
  3. Dip each chicken breast into the beaten eggs, making sure it’s coated on both sides.
  4. Press the chicken breasts into the flour mixture, making sure they are fully coated with the seasoned flour.
  5. Heat vegetable oil in a large skillet over medium-high heat. The oil should be around 1/2 inch deep.
  6. Carefully place the coated chicken breasts into the hot oil and cook for about 4-5 minutes per side, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C). Cook in batches if necessary.
  7. Once cooked, transfer the chicken breasts to a paper towel-lined plate to drain excess oil.
  8. Assemble the sandwiches by spreading mayonnaise and mustard (if desired) on the burger buns.
  9. Place a lettuce leaf on the bottom half of each bun, followed by a crispy chicken breast.
  10. Top the chicken with sliced tomatoes and pickles.
