  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, sift together flour, sugar, baking soda, salt, and cocoa powder.
  3. In a large bowl, mix together oil, buttermilk, eggs, food coloring, vinegar, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until smooth and well combined.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  7. Remove the cakes from the oven and allow them to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  8. While the cakes are cooling, prepare the cream cheese frosting. In a large bowl, beat together the cream cheese and butter until smooth and creamy.
  9. Gradually add the powdered sugar, one cup at a time, beating well after each addition. Stir in the vanilla extract.
  10. Once the cakes have cooled completely, spread a layer of cream cheese frosting on top of one cake layer. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
  11. Decorate the cake as desired and refrigerate until ready to serve.
