Ingredients
-
2 cups All-purpose flour
-
2 teaspoons Baking powder
-
1/2 Salt
-
1/2 cup Unsalted butter
-
11/2 cups Granulated sugar
-
3 Large eggs
-
1 teaspoon Vanilla extract
-
1 cup Milk
-
11/2 cups fresh and chopped Strawberries
Directions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This can be done with an electric mixer or by hand using a wooden spoon.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined, being careful not to overmix.
- Gently fold in the chopped strawberries, ensuring they are evenly distributed throughout the batter.
- Divide the batter equally between the prepared cake pans, smoothing the tops with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.
- While the cakes are cooling, prepare the frosting. In a large mixing bowl, cream the softened butter until smooth. Gradually add the powdered sugar, milk, and vanilla extract. Beat until creamy and well combined. If desired, stir in the finely chopped strawberries for an extra burst of flavor.
- Once the cakes are completely cooled, place one cake layer on a serving plate. Spread a generous amount of frosting on top. Place the second cake layer on top and frost the sides and top of the cake with the remaining frosting.
- Garnish the cake with fresh sliced strawberries for an elegant touch.
- Slice and serve the delectable Strawberry Cake to enjoy its fruity and sweet flavors.
Note: It’s best to store the cake in the refrigerator due to the fresh strawberries in the frosting. Remember to bring it to room temperature before serving for the best texture and taste.
