1. Marinate the Bavette Steak:

  • In a small bowl, mix together the minced garlic, olive oil, ground cumin, chili powder, salt, pepper, and lime juice.
  • Place the Bavette steak in a large resealable plastic bag or shallow dish.
  • Pour the marinade over the steak, making sure it’s well-coated.
  • Seal the bag or cover the dish and refrigerate for at least 30 minutes, but ideally, marinate it for 2-4 hours for the best flavor.

2. Prepare the Toppings:

  • While the steak is marinating, prepare your taco toppings. Dice the tomatoes, shred the lettuce, chop the cilantro, and dice the red onion. Set aside.

3. Grill the Bavette Steak:

  • Preheat your grill to medium-high heat. You can also use a stovetop grill pan or a regular skillet if you don’t have a grill.
  • Remove the steak from the marinade and let any excess drip off.
  • Grill the steak for about 4-5 minutes per side for medium-rare, or adjust the cooking time to your desired level of doneness.
  • Remove the steak from the grill and let it rest for a few minutes before slicing it thinly against the grain.

4. Assemble the Tacos:

  • Warm the tortillas by placing them on the grill for about 30 seconds on each side or by wrapping them in a damp paper towel and microwaving them for 20-30 seconds.
  • Place some sliced Bavette steak on each tortilla.
  • Top with diced tomatoes, shredded lettuce, diced red onion, and chopped cilantro.
  • If desired, sprinkle with crumbled queso fresco or grated cheddar cheese.
  • Add a dollop of sour cream or your favorite salsa on top.

5. Serve and Enjoy:
