If you love tiramisu, you have to try these tiramisu cookies. The combination of delicious coffee-flavored cookies and the creamy mascarpone filling will win you over with the first bite, and finally, dust them with cocoa and enjoy these little tiramisu bites.

Cookies

1 Melt the butter
Melt the butter in the microwave or in a small saucepan over low to medium heat. Pour the melted butter into a large bowl and let it cool, then place it in the fridge for about twenty minutes.

2 Add the sugars
Once the butter has reached room temperature, add the white and brown sugar and stir with a wooden spoon for one minute. Add the egg and vanilla extract, mixing until you achieve a smooth texture.

3 Mix the dry ingredients
In a separate bowl, combine the flour, baking powder, baking soda, instant coffee, and salt. Add the dry ingredients to the wet mixture and use a spatula to mix until everything is well combined.

4 Shape the cookies
Divide the mixture into 11 parts and form each into a ball. Arrange the balls on parchment paper and refrigerate them for about an hour to firm up.

5 Bake
While the cookie dough is in the fridge, preheat the oven to 180°C (350°F). Place 6 cookie dough balls on a baking sheet (as they will spread while baking), and bake each batch for 10 to 11 minutes.

After baking, let the cookies cool on the tray for about 3 minutes before transferring them to a cooling rack to cool completely.

 

Filling

1 Whip all the ingredients
In a bowl, whip all the filling ingredients. Mix for a few minutes until you achieve a firm, smooth cream.

2 Decorate the cookies
Place the cream in a piping bag and decorate the cookies. Finally, dust each cookie with cocoa powder.
